Butchery Operations Manager Luxury Country Estate - Somerset JWR is currently working with a renowned luxury country estate in Somerset looking to recruit an experienced Butchery Operations Manager to lead their state-of-the-art butchery facilities. This facility plays a central role in the estate's food production, providing high-quality products to estate dining outlets and local retailers. Your role will cover all aspects of meat processing, including raw, cured, and cooked meat production, packaging, and facility hygiene. Additionally, you'll have the opportunity to host educational workshops, where guests can learn about the estate's commitment to a sustainable, nose-to-tail approach to meat processing. This role is ideal for a seasoned butcher with a deep understanding of whole carcass butchery, experience in large-scale production, and a passion for product innovation. Key Responsibilities Train, develop, and manage the butchery team Order supplies, manage stock levels, and maintain supplier relationships Maximise carcass utilisation and minimise waste Oversee HACCP and ensure strict adherence to food safety regulations Innovate and launch new products for estate and retail outlets Desired Skills and Experience Extensive experience in whole carcass butchery and a strong understanding of high-quality finished products Proficient in production planning, scheduling, and work-flow optimisation Exceptional food safety and hygiene standards Prior experience managing a large-scale butchery or meat production facility; experience in charcuterie is a plus Proven track record supplying to both retail and restaurant sectors If you would be interested in discussing in more detail, send your CV today!
